Besan ke nimbu
Thinking of an amazing appetizer to engage vegetarian guests at a party is quite a challenge. These Besan ke nimbu are tangy rounds of roasted gram flour that tingle the taste buds.

Ingredients:
- Gram flour (besan)
- Clarified butter (ghee)
- Red chilli powder
- Ginger garlic paste
- Fresh cilantro
- Green chillies
- Salt
- Baking soda
- Fresh lemon juice
- Water
- Oil for frying
Method:
- Heat ghee in a pan. Turning the pan to low heat, add the gram flour and roast till the flour turns golden brown and aromatic.
- Set aside 2 Tbsp of the gram flour.
- To the rest of the gram flour add salt, 1 tsp of red chilli powder, ginger garlic paste, baking soda, cilantro and green chilies.
- Add the fresh lemon juice and knead in to a dough, using a little water as needed.
- Roll small balls out of little bits of the dough.
- Take the 2 Tbsp of gram flour that was set aside in a small bowl. Add salt, 1/2 tsp of red chilli powder and water to make a thin batter.
- Heat oil in a deep pan, for frying.
- Dip the dough balls in the batter and fry till golden brown.
- Serve hot with ketchup or mint chutney.
